Position Summary Job Summary: The primary function of the Production Manager is to ensure all protein manufacturing aligns with company volume, innovation, quality and safety standard needs. Responsibilities include but are not limited to the following : Directly responsible for production and packaging of all sausage products Proper execution of recipes, mixtures, cooking procedures and packaging requirements Manage and order ingredients from vendors to meet budget and production needs Manage production team; hiring, onboarding and scheduling to align with company standards Manage team to maintain, clean and sanitize all processing equipment and workspaces Fulfill production orders within defined production dates Measure and validate all ingredients match build sheet prior to production Review all processes are being executed properly by staff including, accurately weigh and measure both wet and dry ingredients utilizing scales in grams, kilograms, ounces or pounds Operate and train all employees on meat grinder, mixer and sausage stuffing equipment including safety, standard sanitation, and maintenance Manage the proper rotation of bulk meats, bulk cured meats, cooked and packaged sausages during production Document production times and temperatures of bulk meats, bulk cured meats, raw and cooked sausage links through the entire production process Manage smokehouse operation and sanitation to ensure consistent functionality and food safety standards are met Meet/exceed all state/local food safety codes Adhere fully to the execution of established safety, security, quality and operations policies, procedures, and practices Manage and organize process workflows to maximize production and product quality
